Orange Oven Braised Pork
  • 4 pieces thick pork chops
  • 1/4 cup orange juice
  • 1/4 cup cooking sherry (or marsala wine) [i.e. salted cooking wine]
  • 2 cloves garlic
  • white pepper, ground ginger, dried orange peel
  1. Preheat oven to 400
  2. Rub the pork chops with the spices (white pepper, ground ginger, and dried orange peel)
  3. Brown the pork chops in frying pan with enough vegetable/canola oil so it doesn't stick (roughly 4-6 minutes per side, can be longer if desired)
  4. Place the pork chops in small casserole dish, bake covered for 15 minutes.
  5. Add orange juice, cooking wine, and garlic to casserole dish, bake uncovered for 30 minutes.
  6. bake another 20 minutes, checking periodically to make sure the liquid is not dried up (if the liquid is reducing too quickly, lower the heat and cover the casserole dish).
  7. Serve pork chop on plate, drizzle with the reduced liquid from the casserole dish.
Grandma Matson's Meatloaf
  • 2 lbs chopped meat
  • 2 slices bread, torn fine and soaked in
  • 3/4 cup milk
  • 1 egg
  • 1/2 tsp salt
  • 1 onion, chopped fine
  • 1 stalk celery, chopped fine
  • 2 strips bacon (optional)
  1. Preheat oven to 375
  2. Mix bread, milk, and egg
  3. Add salt, and stir well
  4. Add meat, onions and celery
  5. Mix with hands
  6. (optional) Arrange bacon on top as garnish
  7. Bake for 1 hour
Tourtiere (Meat Pie)
[makes 4 pies]
Crust: for each pie
  • 2 cups flour
  • 1 1/2 tsp salt
  • 1/4 cup oil
  • 1/2 cup cold milk
Filling: for 4 pies total
  • 2 tbsp margarine
  • 1 lg onion, chopped fine
  • 1 lb ground round
  • 1 1/2 lb ground hamburger (fatty ground beef)
  • 1/2 lb ground pork
  • 1 tsp allspice
  • 1 tbsp Bell's seasoning
  • 3-4 potatoes, peeled, boiled, and roughly mashed
  • 1 small box Bell's bread crumb stuffing mix
  • water
  • salt
  • pepper
  1. Make pie crust -- mis flour and salt, add oil and milk and blend. Roll and line 9" pan.
  2. Sauté onion in margarine. Add meat, spice, and seasoning.
  3. Moisten the stuffing mix in a separate bowl (not too wet -- its function is to soak up moisture)
  4. Mash potatoes.
  5. Add potatoes and stuffing to the meat. Stir together until the consistency is like uncooked meatloaf. (You may have extra stuffing.)
  6. Put meat mixture into the pie shells, top with more pie crust. Brush with milk. Cut steam vents.
  7. Bake at 350 degrees for 1 hr. Serve warm.
